Thanks to a generous Education Department grant, I did my fieldwork in Oxfordshire in 1972. At the conclusion of my stay I thanked the County Director and asked how I could repay the help and cooperation his teachers had given me. "Take them to dinner and tell them to order meat," he said, "They don't see much meat".
